chore: require Python 3.11 and clarify default mode semantics (#5)

The daemon imports the stdlib tomllib module, which only exists on
Python 3.11+, so the previous requires-python = ">=3.8" was inaccurate.
Align the metadata and docs with what actually runs.

- pyproject.toml: requires-python >=3.11
- README / DEVELOPMENT: Python 3.11+, badge 3.11-3.13
- README: split the default mode docs by device — DuoCast restores its
  built-in gradient, QuadCast II just releases the HID handle and keeps
  its last state
- cli --mode help: describe default as releasing software control
