* fix: align Vite with plugin-react 6

@vitejs/plugin-react 6.1.1 requires Vite 8, but this PR resolved Vite 7.3.5. Upgrade Vite so the plugin can resolve its internal API during the demo build.

* chore: group Vite Dependabot updates

Keep Vite and @vitejs packages aligned so plugin updates cannot land without their compatible Vite release.
