docs(deployment): Drive the minimal stack with the root ./archon script

The guide spelled out `docker compose exec cli node scripts/archon-cli.js`,
which the ./archon script in the repository root already wraps. It calls
`docker compose` with no -f, so the section exports COMPOSE_FILE and
points at ./admin and ./ipfs alongside it.

Reverts the wrapper added to Dockerfile.cli and the tests/cli/helpers.ts
change that covered it: both duplicated ./archon.
