Make sqlite pocket the default (#294)

This PR makes SQLite the default pocket/database backend in financeager, while keeping TinyDB support as an optional extra dependency and updating tests, docs, and tooling accordingly.

Changes:
- Switch default `database_type` from `tinydb` to `sqlite` via a shared `POCKET_DEFAULT_TYPE`.
- Make TinyDB optional (`financeager[tinydb]`) and guard TinyDB imports accordingly.
- Update tests/docs/CI to reflect the new default and migration guidance.
