* docs(compose): Add an env sample for the minimal compose stack (#983)

minimal.yml had no env sample of its own, so the only way to run the core
stack was to copy sample.env -- 402 lines and 205 variables covering
Lightning, Tor, the chain mediators, Herald, Drawbridge and observability,
none of which minimal.yml starts.

minimal-sample.env carries the 23 variables the included fragments
interpolate without a default, and nothing else. Compose substitutes an
empty string for a missing variable rather than failing, so the omissions
would have surfaced as misbehaviour at runtime rather than at startup.

It also selects the hyperswarm profile. hyperswarm-mediator is
profile-gated, so the stack otherwise came up without the mediator while
the gatekeeper was still configured to publish to the hyperswarm registry.
The README's "run only the core services" recipe had that same gap, and
pointed at the default compose file rather than minimal.yml, which no
document mentioned at all.

The sample and the fragments now hold the same variable list in two
places, which is the drift #954 was, so a guard test asserts the sample
covers every no-default variable, carries nothing extra, selects every
gated profile, and agrees with sample.env wherever both set a variable.

* config(gatekeeper): Point the confirm fallback at archon.technology

ARCHON_GATEKEEPER_CONFIRM_FALLBACK_URL was blank in both samples, so
confirm=true resolution that came back unconfirmed locally had nowhere to
go. It takes a peer Gatekeeper rather than a universal resolver, and is
only ever asked about this node's own method.

ARCHON_GATEKEEPER_FALLBACK_URL stays on the universal resolver: that one
is skipped for own-method DIDs, so foreign methods are the only traffic it
sees, and archon.technology a... (continued)
