Refresh the release example in the README

The sample `just release` transcript ran from 0.5.0, and its pending entry
described the non-recursive directory bug that shipped in v1.0.0, so it
could not also be sitting under Unreleased. It now runs from the released
version with a hypothetical entry, and answers patch rather than major,
which is the bump a Fixed entry implies and what the paragraph below the
block says the entries decide.
