repo: drop the deprecated license classifier

`license = "MIT"` already produces `License-Expression: MIT`, which PEP 639
made the canonical form and which deprecates the classifier saying the same
thing. Two statements of one fact, and the wrong one is the one a licence
change would leave behind.

It also stops being merely redundant at some point: with `License-Expression`
present, PEP 639 has build tools MAY error on a license classifier. `uv_build`
warned; hatchling is quiet about it today, and a release build is a poor place
to discover it changed its mind.
