perf(docker): Split the wallet sidecars into build and runtime stages (#992)

The five wallet mediators share one shape -- root install, root build,
copy the service to ./wallet, build it -- so they take the same two-stage
split drawbridge did in #990: the install and both prunes happen in a
builder that is discarded, and the runtime carries only the pruned
dependency trees, the compiled output, and the workspace packages they
resolve through.

Measured against the images already on hand:

  ethereum-wallet   1.16GB -> 653MB
  satoshi-wallet    1.16GB -> 648MB
  solana-wallet     1.16GB -> 680MB
  zcash-wallet         -   -> 640MB
  filecoin-wallet      -   -> 1.01GB

No prior image was on hand for zcash-wallet or filecoin-wallet, so those
two have no measured starting point.

filecoin-wallet stays much larger than its siblings because its own
production tree is 520MB against satoshi's 45MB -- `filecoin-pin` brings
a great deal with it. The prune runs there too; `typescript` is absent
from both images.

Each image was built and run: all five reach their startup retry loop
against an absent upstream, with no missing modules.
