fix: resolve lua include paths relative to repo root in CI

LUA_INC/LUAJIT_INC backticks are evaluated in the lua module directory,
so they previously emitted -I../.lua/include. Since compilation now runs
from the repo root, strip the leading ../ so -I.lua/include is used.
