Fix CI docs deploy, coverage upload, and stale version badge

Three independent breakages surfaced by the README badges:

- Documentation job failed with "Load key: error in libcrypto" ->
  "Permission denied (publickey)": the DOCUMENTER_KEY secret is
  corrupted. Switch deploydocs to the automatic GITHUB_TOKEN over
  HTTPS (contents: write on the docs job) so no SSH deploy key is
  needed, and pin devbranch="main" so dev docs deploy from pushes to
  main.
- Codecov rejected every upload with "Token required - not valid
  tokenless upload", leaving the badge unknown. Replace it with
  Coveralls, which authenticates via the workflow's GITHUB_TOKEN, and
  upload only from the Julia 1 job.
- The version badge pointed at juliahub.com/api/v2/packages/.../version,
  which now 404s. Use JuliaHub's official version.svg endpoint.

Also bump checkout to v5 and scope the badge/link to branch=main.
