Document the sortable keys and drop the deprecated direction parameter

The `order` query parameter is now documented with the keys the entity and the action
declare through #[ApiSortable], and with the comma separated, `:direction` suffixed
syntax the RestBundle understands.

`direction` is no longer documented: it still works but is deprecated.

Requires gollumsf/rest-bundle ^5.0.
