Improve error loggin

Before this commit, when we hit an error, we would send it to
Honeybadger and relay it to the user, but never actually
log the error.

In this commit, we:
* Log any errors we encounter
* For Solr specifically, log the exact error that we get from
  our HTTP request
* Switch a Struct to a Data, since Data has the benefit of
  being immutable.
