changelog: point the link references at v0.1.0

The bump left these behind. [unreleased] still compared against
v0.0.1, so it showed every commit of the released version as
unreleased, and [0.1.0] had no definition at all, so its heading
rendered as literal brackets rather than a link. Markdownlint does
not check reference targets under this project's config, which is why
nothing caught it at release time.
