feat(server): add trusted proxies for HTTP server

- Add `trusted_proxies` configuration option for the HTTP/DoH server.
- Clarify existing proxy protocol descriptions to explicitly target DoT.
- Update Gin engine to respect the new trusted proxies list for proper
  client IP resolution behind reverse proxies.
