fix(data): drop hardcoded ARK and URN from the document fixtures

URNs and ARKs types are minted by the application, never authored in
data. Writing them by hand produced values that no code path could have
generated, and resulted in broken URLs in the demo instances.

Tests:

* use well-formed sample values for the ARK and URN identifiers of the
  RIS/BibTeX serializer tests, the previous ones having been copied from
  the fixtures.
* rewrite the BibTeX duplicate-type case on a realistic scenario. A
  record holding two ARK is not one; a type repeated between a record and
  its host document is, since `extract_identifiers()` merges both
  sources.
