Copy state instead of writing through on an unrebuildable set path (#746)

`ctx.store.set` fell back to writing straight into committed state when
the write path ran through something it could not rebuild, so a
dataclass, tuple, or plain object on the path made the write visible to
lockless readers before it committed; the fallback now copies state
first.
