ci(data): make demo data more coherent

The generated fixtures were internally inconsistent in ways that were
visible in the UI, which made the demo look synthetic rather than like
a real repository.

Structure:

* give the thesis document types a `dissertation` block and keep
  `partOf` only on the types that actually have a host document
* align `identifiedBy` with the document type

Languages:

* 380 of the 505 records declared `fre`, `ger` or `ita` while their
  title, abstract and subjects were English; all text is now written in
  the language the record declares
* replace the mechanical fre/ger/ita/eng round-robin with a shuffled
  mix weighted like a Swiss repository (eng 225, ger 126, fre 114,
  ita 40)
* translate the degree labels, granting institutions and host
  publication titles into the language of the record

Metadata:

* drop the `lorem lorem` padding and the `— Study NNN` title suffixes,
  and move subtitles to the `subtitle` field of the schema
* draw the subjects from the topic of the record and its domain instead
  of a global pool
* skew the publication years towards recent ones, and restate the year
  consistently in `provisionActivity`, `partOf`, `dissertation` and the
  text of the abstract
* build each host publication statement from the place and publisher of
  the record

The hand-written `hepvs` records are left untouched.
