Remove eslint dev deps covered by @rubensworks/eslint-config (#27)

The shared config already pulls in eslint-plugin-import,
eslint-plugin-jest, eslint-plugin-tsdoc, eslint-import-resolver-typescript
and (via @antfu/eslint-config) the TypeScript ESLint plugin and parser,
so these no longer need to be declared here. eslint-config-es and
eslint-plugin-unused-imports were leftovers from the old .eslintrc setup
and are unreferenced by the flat config.
