fix: comprehensive backend config redaction (#3844)

* test: add config redaction coverage for all backend adaptors in API index endpoints

Adds parameterized tests over every backend adaptor with a redact_config/1
implementation, attaching each as a default-ingest backend on a source and
asserting GET /api/sources and GET /api/backends never leak the raw secret.
