build: replace nyc with vitest --merge-reports for coverage (#10225)

* build: replace nyc with vitest --merge-reports for coverage

Each package test run now writes a vitest blob report alongside its own
coverage, and scripts/test.sh merges those blobs into the combined
coverage/lcov.info instead of shelling out to nyc merge/report.

Package vitest configs set an explicit test.name so their blobs map back
to the matching project in the root config during the merge; without it
every blob claims the unnamed root project and the merged run reports no
test files.
