test: guard ForbiddenApiChecker against real AssertJ assertThat import

The regression test added for the null-symbol crash used a hand-rolled
stand-in for an overloaded static import instead of the actual library
call that surfaced it in production. Add a second regression test
against the real org.assertj.core.api.Assertions.assertThat (already a
test dependency here) to guard the exact construct that broke.
