[Scheduling] Service select component and react-scheduling test setup (#10144)

* feat(mock): add HealthcareService location and name search parameters

MockClient resolves search filters and `_sort` against its own search
parameter registry, so searching HealthcareService by name or by the
location that holds it needs both parameters registered in the mock
bundle.

* feat(react-scheduling): add the appointment service pick list

`AppointmentServiceSelect` chooses the service an appointment is for. It
searches HealthcareService by name, narrows the list to the services held
at a chosen location when one is given, and keeps only services carrying a
`SchedulingParameters` extension — without one there is no duration or
alignment for `$find` to work from, so booking against them cannot
succeed. That filter runs client-side because it reads an extension, which
no search parameter covers.

Options render through `AppointmentOptionRow`, which puts the service name
over its category and visit length so two services of the same name can be
told apart.

Also adds the story fixtures and the async autocomplete test helpers the
new tests and stories build on.
