test(composables): mount composable specs through the real prefetch transform

Render a .vue fixture with Testing Library instead of hand-building a component
with createApp, so the build step attaches preFetchOperations the way it does in
the app rather than the spec standing in for it. Drops the beforeEach mock in
useMultiMatching so each test builds its own client, and names the apollo
factories for the operation they serve.
