docs: correct offline-mode write behavior (write-back, not EROFS) (#61)

The offline docs stated that writes were rejected with EROFS and that
create/delete/rename failed with EROFS. EROFS is never used: writes to
existing files are buffered locally (write-back) and uploaded by the
UploadManager on reconnect, while structural mutations fail with EIO because
they need Graph. Align ARCHITECTURE and OFFLINE_MODE (EN + ES).
