ci: deploy docs site from an isolated docs package

The docs site now lives in its own private npm package under docs/, with its own dependencies and lockfile.
This keeps VitePress entirely out of the published library: package.json and package-lock.json at the root are
back to their upstream state, with no vitepress dependency and no docsscripts.
