* compose: make Drawbridge subservices independently toggleable (lean drawbridge)

The drawbridge profile pinned all 6 drawbridge services AND the whole Lightning rail to one
profile, and drawbridge hard-depends_on lightning-mediator — so enabling drawbridge dragged in
Lightning + Tor + Herald (~850MB) even for a node that only needs the /didcomm front-door proxy.

The drawbridge SERVICE already gates each subservice on its ARCHON_*_URL (config.ts uses ?? so an
empty value disables it -> clean 501 + capability:false). Only the compose layer was coupled. This
is a pure-compose change (no service code):

  drawbridge, drawbridge-client        -> profile 'drawbridge'            (the lean proxy)
  lightning-mediator + Lightning rail  -> profile 'drawbridge-lightning'  (cln/lnbits/rtl/inits)
  herald, herald-client                -> profile 'drawbridge-names'
  tor                                  -> profile 'drawbridge-tor'
  drawbridge -> lightning-mediator, herald -> tor : depends_on required:false

So 'drawbridge' alone = a lean, egress-free /didcomm-capable proxy; the full stack is
'drawbridge,drawbridge-lightning,drawbridge-names,drawbridge-tor'. sample.env's default keeps the
full stack (no regression) and documents the lean recipe. Verified with 'docker compose config':
lean set = core + drawbridge + drawbridge-client (no rail leak); full set = the whole rail.

Motivation: a sealed pi-lean node needs a front-door proxy because keymaster's DIDComm gateway is
'<nodeUrl>/didcomm' (sendDidComm has no endpoint override) — a lean drawbridge makes didcomm-direct
work without the Lightning/Tor weight.
