chore: raise PHPStan to level 7 (#50)

Both findings were array_map('"'"'trim'"'"', $data) over fgetcsv() output.
fgetcsv yields null, not '"'"''"'"', for an empty unquoted field, so the callback
was being handed a string|null: deprecated on PHP 8.1 and a TypeError on
PHP 9. Replaced with a small typed closure that coalesces first, used at
both the header and the row site.
