ci: release on merge to main (#52)

Ports the flow piloted on LifeLines. A merge to main now runs the gates,
derives the version level from the conventional-commit prefixes since the
last v* tag, raises the version, builds the production archive and
publishes it as a GitHub Release with the zip attached.

That removes the manual step between "tests pass" and "there is something
installable", and builds the shipping zip from merged code on a clean
runner rather than from a working tree on one machine.

The release job reproduces this plugin's own checkout layout, because
composer build:production is what produces the zip and it needs whatever
the gates needed in order to build. The self-checkout gains fetch-depth: 0
— at the default depth of 1 there is no history to read and no tag to find.

Also adds workflow_dispatch and drops the shared concurrency group on main,
both of which the 2026-08-06 Actions outage showed to be necessary: a merge
cannot be repeated, and a run that never starts must not block the ones
behind it.

What it costs: nobody confirms the level any more. Prefixes state intent,
not effect, so a feat: that only fixed something still takes the minor.
