Add overflow checks

This adds overflow checks in a few places to improve robustness and
error checking especially on embedded platforms.

The mpack_checked_*() functions are modeled after the ckd_*() functions
from C23, only they are more strongly typed. This makes the overflow
checks obvious wherever they are used.

We report mpack_error_too_big whenever an overflow occurs. (In at least
one case this was changed from mpack_error_invalid.)
