fix: bump opennlp-tools 1.9.1 -> 2.5.9 to match Grobid 0.9.1

Grobid 0.9.1 upgraded opennlp-tools to 2.5.9 and grobid-core now calls
SentenceDetectorME.sentPosDetect(CharSequence) (an OpenNLP 2.x overload).
The old direct pin (1.9.1) overrode the transitive 2.5.9, causing a
runtime NoSuchMethodError during sentence segmentation on the
/processQuantityText endpoint. The project does not use OpenNLP directly.
