test: replace PowerMock with Mockito; remove PowerMock

Migrate the remaining PowerMock/EasyMock static-mocking tests to
Mockito's mockStatic (as the parent Grobid project did):
- FeaturesVectorUnitTest, FeaturesVectorQuantitiesTest: mockStatic(FeatureFactory)
- QuantifiedObjectTrainingFormatterTest: mockStatic(UUID)
- UnitParserIntegrationTest (@Ignore'd): Whitebox -> plain reflection

Drop powermock-module-junit4 / powermock-api-easymock; add mockito-core
5.14.2. Add an explicit junit:junit:4.13.2 (the JUnit 4 API was
previously provided transitively by powermock-module-junit4; JUnit 4
tests still run via junit-vintage-engine). Full suite green (154, 3 skipped).
