test: cover the admin layer and drop its coverage exclusion (#49)

src/Trumpet/Admin was excluded from the coverage source set as
"render/menu/enqueue glue exercised through WordPress at runtime". Amber
covers its whole src/Admin on the same tooling, so the exclusion was
habit rather than necessity — and this admin layer is not glue: it
computes the status each list-table row shows and the meta value that
status is sorted by, and it owns the setting that decides whether
uninstalling takes the announcement posts with it.

63 new tests across two files:

- TrumpetAdminTest — hook registration (and that nothing registers
outside the admin), the column set, quick-edit removal, admin_head
styles, every column renderer, all eight statuses paired with the sort
key each records, all five customSortColumns() branches including the
two screen-gated rebuilds, the three admin notices with their
singular/plural forms, and both save handlers.
- TrumpetSettingsTest — menu placement, the registered setting and its
preserve-data default, the capability guard, the rendered form, and the
  checkbox in all three states.

Four of the five catch blocks in TrumpetAdmin are covered, two through
the manager mock and two by aliasing get_posts()/update_post_meta() to
throw. The class docblocks record the three branches deliberately left
uncovered and why.

No production code changed: neither class redirects-and-exits, so the
exit wall the earlier ports hit did not apply and nothing needed
extracting.

Also drops a ReflectionMethod::setAccessible() call in
RenderedMapMarkupTest that PHP 8.5 deprecates — it has had no effect
since 8.1, and it was the suite's only deprecation.

Coverage, both with the same test suite: 751/813 lines (92.37%) before,
1066/1138 (93.67%) after. The denominator grows by 325 lines, so the
percentages are not comparable; the headline rose only because the newly
visible lines are covered above average.
