ci: report the coverage to coveralls

A dedicated job, so the report is produced once rather than by each of
the matrix combinations, and with a mongodb server up: the document
repository only runs with one, and the figure would understate the
coverage without it.

Uses the token GitHub provides, so there is no secret to configure.
