Release 2.0.0 (#10)

* Release 2.0.0

Major, because the release breaks things on purpose:

- Python 3.7-3.9 can no longer install it.
- Nested `lap()` blocks now record separate laps instead of merging.
- `Statistics(values)` copies instead of aliasing.
- `Stopwatch.running` reflects any running lap.
- `profile` takes keyword-only parameters and rejects `report_every < 1`.

`1.1.2` was bumped in pyproject but never tagged or released, and
`git diff v1.1.1..main -- stopwatch/` is empty, so the changelog entry
covers everything since 1.1.1 rather than inventing a 1.1.2 section.

SECURITY.md's supported-versions table follows the new major.
