chore: rename the `help` composer script to `build:help` (#40)

Composer refuses to let a script shadow one of its own commands, so it printed

    A script named help would override a Composer command and has been skipped

on every invocation, and `composer help` always returned Composer's own help
rather than `php build.php --help`. The script was unreachable.

`build:help` fits the build:* family already here (build, build:production,
build:dev, build:clean).

QUICKSTART.md referenced `composer help` twice, and the two meant different
things — only one is changed:

  - line 45 sits in a list of build-script commands under "# Get help", so it
    meant this script and was broken. Now `composer build:help`.
  - line 217 reads "Script help: php build.php --help" / "Composer help:
    composer help", deliberately contrasting the two. That one genuinely means
    Composer's own help and is left as it is.

No version bump: composer.json and *.md are both excluded from production
builds, so the shipped archive is unaffected.

Same fix Trumpet had; those were the only two plugins with the defect.
