chore: rename the `help` composer script to `build:help` (#43)

Composer refuses to let a script shadow one of its own commands, so it printed

    A script named help would override a Composer command and has been skipped

on every invocation — including each `composer build:production`, which is how
it surfaced during a release run. The script was unreachable: `composer help`
always got Composer's own help, never `php build.php --help`.

`build:help` fits the build:* family already there and is unambiguous about
which help it means. Nothing referenced `composer help` — no CI step, no doc,
no other script — so this breaks nothing.

No version bump: composer.json is excluded from production builds, so the
shipped archive is unaffected.

Confur has the same unreachable `help` script and will print the same warning.
Left alone here — separate repo, separate change.
