ci: drop EOL EventStoreDB 20.10.2 from the compatibility matrix

20.10.2 (Dec 2020) is long past end-of-life, and its older server-side $all
event-type filtering intermittently let system events through, making the
global-subscription tests flaky in a way the per-test retry can't heal. Keep
22.6.0 in the compatibility matrix; the primary CI workflow already exercises
the current 23.10.8 target.
