test: take WordPress stand-ins from wp-mocks (#30)

Amber is where WpState and FakeWpdb were invented, and where wp-mocks was
largely factored out of. This hands the originals back: tests/stubs/wordpress.php
(877 lines), tests/WpState.php and tests/FakeWpdb.php all go, and the suite
takes the shared copies instead.

Comparing the two side by side, the only WordPress functions this plugin
defined that wp-mocks does not is the hook family — add_action, add_filter,
do_action, apply_filters, has_action, remove_action, did_action — and that is
deliberate. Brain Monkey owns them, and a stub defined at bootstrap would
permanently shadow its definitions; the failure is silent, because hook
expectations then go unsatisfied while the calls quietly go elsewhere.

So hooksFor() is replaced by assertHookAdded(), over Brain Monkey's stores.
It keeps the old semantics exactly — "is *something* registered under this
name" — which matters because several of the names these tests assert on are
filters (manage_*_posts_columns) sitting alongside actions (save_post_*), and
Brain Monkey keeps the two apart.

JsonResponseException and WpDieException were local classes with the same
shape as the package's; the imports repoint and nothing else changes.

413 tests, PHPStan clean — identical to before.
