test: take WordPress stand-ins from wp-mocks (#26)

The bootstrap defined wp_json_encode() and sanitize_key() by hand. Both come
from bleedingdeacons/wp-mocks' `wordpress` group, which the rest of the suite
is already on, so the local copies go and the tests extend the shared
TestCase — Brain Monkey lifecycle, Mockery integration and a WpState reset
between tests.

Only the `wordpress` group is loaded. Whatsapp\Logger\HasLogger is written to
degrade to error_log() when wp_log() is absent, and that is the branch these
tests run; loading the `sentinel` group would define wp_log() and silently
route logging somewhere no test looks.

The Rabbit source requires stay: that is a sibling plugin, not reachable from
Composer's autoloader here.

17 tests, PHPStan clean.
