chore(tests): migrate from wp_mock to bleedingdeacons/wp-mocks (#27)

10up/wp_mock 1.1.1 declares "phpunit/phpunit": "^9.6" in its own require
block and has no PHPUnit 10 branch, so this suite silently resolved to
PHPUnit 9.6.35 despite composer.json asking for "^9.6|^10.0". Brain Monkey
declares no PHPUnit constraint at all, which frees the suite to 10.5.

- composer.json: drop 10up/wp_mock, add bleedingdeacons/wp-mocks ^1.0.2 via a
  vcs repositories entry, pin phpunit/phpunit ^10.5.
- phpunit.xml.dist: 10.5 schema — coverage include/exclude moves into
  <source>, both exclusions carried across intact; cacheResultFile becomes
  cacheDirectory.
- tests/bootstrap.php: Bootstrap::loadPatchwork() first, then this plugin's
  own wp-stubs.php, then Bootstrap::load(['wordpress']) as a backstop. That
  order matters twice over: Patchwork has to precede anything patchable, and
  wp-stubs.php has to precede the shared layer so its recording
  register_post_type()/register_rest_route() keep winning — the tests read the
  $GLOBALS those fill.
- tests/TestCase.php: extends the shared TestCase.
- Call sites: WP_Mock::userFunction() becomes Functions\expect(),
  WP_Mock::onFilter()->reply() becomes Filters\expectApplied()->andReturn().
  The __() and current_user_can() stubs are gone — both are real functions in
  the shared layer with the behaviour these tests asked for.

Two things wp-stubs.php no longer defines:

  - add_action() and add_filter(). Brain Monkey owns the hook layer and
    defines them lazily in its setUp(); a no-op defined at bootstrap would
    shadow them permanently and silently, so every hook expectation would just
    never be satisfied. The pure-PHP tests still extend PHPUnit's TestCase, so
    that split is now load-bearing rather than merely tidy.
  - ARRAY_A, sanitize_text_field(), sanitize_textarea_field(), is_wp_error()
    and flush_rewrite_rules(), all of which the shared layer carries with the
    same behaviour.
