chore(tests): migrate from wp_mock to bleedingdeacons/wp-mocks (#32)

10up/wp_mock 1.1.1 declares "phpunit/phpunit": "^9.6" in its own require
block and has no PHPUnit 10 branch, so this suite silently resolved to
PHPUnit 9.6.35 despite composer.json asking for "^9.6|^10.0". Brain Monkey
declares no PHPUnit constraint at all, which frees the suite to 10.5.

- composer.json: drop 10up/wp_mock, add bleedingdeacons/wp-mocks ^1.0 via a
  vcs repositories entry, pin phpunit/phpunit ^10.5.
- phpunit.xml: 10.5 schema — coverage include/exclude moves into <source>
  (src/Admin exclusion carried across intact), cacheResultFile becomes
  cacheDirectory, beStrictAboutTodoAnnotatedTests dropped.
- tests/bootstrap.php: require the package bootstrap, which loads Patchwork
  before anything patchable. The local WP_Error goes — the package carries an
  equivalent — while WP_REST_Response stays, as it is not in the shared stubs.
- tests/TestCase.php: extends the shared TestCase. Its esc_sql() and
  wp_parse_args() stubs are gone (real functions in the package), as are the
  unused local assertActionAdded()/assertFilterAdded() copies.
- Call sites: options are seeded into WpState instead of stacking one
  get_option expectation per key; register_rest_route() records into
  WpState::$restRoutes, so the route test reads real registrations rather
  than a capture closure; hook assertions move to Brain Monkey.

HasLoggerTest now covers both branches. wp_log() did not exist in the unit
run before, so only the degraded path ran and it could assert nothing beyond
"did not blow up". The shared `sentinel` stub group supplies a recording
channel, so what the trait forwards is assertable; the absent case is still
reached by making wp_log() return null.

219 tests / 488 assertions (was 217), PHPUnit 10.5.64, PHPStan clean,
production build green. Line coverage 2267/2500 (90.68%), against a 9.6
baseline of 2252/2500 (90.08%) — same denominator, so the coverage
