chore(tests): migrate from wp_mock to bleedingdeacons/wp-mocks (#23)

10up/wp_mock 1.1.1 declares "phpunit/phpunit": "^9.6" in its own require
block and has no PHPUnit 10 branch, so this suite silently resolved to
PHPUnit 9.6.35 despite composer.json asking for "^9.6|^10.0". Brain Monkey
declares no PHPUnit constraint at all, which frees the suite to 10.5.

- composer.json: drop 10up/wp_mock, add bleedingdeacons/wp-mocks ^1.0 via a
  vcs repositories entry, pin phpunit/phpunit ^10.5.
- phpunit.xml: 10.5 schema — coverage include moves into <source>,
  cacheResultFile becomes cacheDirectory.
- tests/bootstrap.php: load the shared stubs via Bootstrap::load(['wordpress']),
  which also loads Patchwork before anything patchable. The `sentinel` stub
  group is deliberately left out: Sentinel *is* the logger, so wp_log() and
  Sentinel_Log_Channel come from the real src/Logger/sentinel-logger.php.
  Its local esc_sql() is gone — the package defines the same thing.
- tests/TestCase.php: extends the shared TestCase; $optionStore collapses into
  WpState::$options, which exists for exactly the reason it was invented.
- tests/AdminTestCase.php: 90 lines of hand-rolled stubs gone. What remains is
  the Settings API no-ops the package does not carry, and the two stubs that
  read a per-test property. Nothing stubs add_action/add_filter any more —
  Brain Monkey owns the hook layer and a stub over it breaks hook assertions
  silently. WpDieException/JsonResponseException now come from the package.
- The hook-suffix tests name the real string add_submenu_page() returns
  instead of a fixed stub value.
- Two new tests where the old stubs had been hiding a branch: getRequestType()
  on an admin request, and handleShutdown() with a non-fatal last error.
- setAccessible(true) calls dropped; no-ops since PHP 8.1 and deprecated in
  8.5, which PHPUnit 10 surfaces as deprecations.
