Replace wp_mock with Brain Monkey and the shared wp-mocks package (#31)

Unity's tests were pinned to PHPUnit 9.6 by a dependency, not a choice.
10up/wp_mock 1.1.1 declares "phpunit/phpunit": "^9.6" in its own require
block and has no PHPUnit 10 branch, so this repo's "^9.6|^10.0" always
resolved to 9.6.35 — silently, unless you ran `composer show`. Brain
Monkey declares no phpunit constraint at all, so the suite now runs on
10.5.64.

The WordPress stand-ins, the base TestCase, the Sentinel logger stub and
the hook assertions all move to bleedingdeacons/wp-mocks, shared across
the suite. assertActionAdded()/assertFilterAdded() existed here and in
four other plugins; they are now one copy over Brain Monkey's hook store.

Two ordering details in the new bootstrap are load-bearing:

- Patchwork is loaded by the package before any stub is defined. Brain
  Monkey only requires it inside Monkey\setUp(), by which time the stubs
  exist, so overriding one otherwise dies with DefinedTooEarly.

- Brain Monkey owns add_action/apply_filters and friends. The package
  deliberately does not stub them, because its definitions load first and
  would shadow Brain Monkey's permanently, breaking hook expectations
  without any error.

Also drops a ReflectionProperty::setAccessible() call in HasLoggerTest —
a no-op since PHP 8.1, which this plugin requires, and deprecated in 8.5.

phpunit.xml moves to the 10.5 schema. The interface-directory <exclude>
block moves into <source> intact; it is what keeps the coverage
denominator honest, and dropping it would have shifted the Coveralls
figure.

Verified: 47 tests and 87 assertions before and after, line coverage
92.11% (105/114) before and after. PHPStan and build:production green.
