Drop unused wp_mock dependency and move to PHPUnit 10.5 (#26)

Beacon never used wp_mock — it was in require-dev but referenced nowhere
outside vendor/. It was not harmless: 10up/wp_mock 1.1.1 declares
"phpunit/phpunit": "^9.6" in its own require block and has no PHPUnit 10
branch, so this suite's "^9.6|^10.0" always resolved to 9.6.35. An
unused dependency was capping the test framework.

Removing it and pinning ^10.5 moves the suite to PHPUnit 10.5.64.
phpunit.xml goes to the 10.5 schema, where coverage include/exclude
lives in <source> rather than the 9.x <coverage> element.

Verified: same tests, same assertions, same coverage before and after.
