Correct the coveralls command in CLAUDE.md

The Mocha and Node version errors were already fixed earlier on this branch. This is the
one claim that pass left standing, and it is the same defect: an agent reading the file
would run `npm run coveralls` and hit a confusing failure.

The script ends in `coveralls < lcov.info`, and `coveralls` appears in neither dependencies
nor devDependencies, so it is not in node_modules/.bin and the command dies with
command-not-found. CI never runs the script — test.yml uploads through
coverallsapp/github-action@v2 — so nothing has been exercising it.

Documented what it actually does and added the command that does produce a local coverage
report. The dead npm script itself is left alone; removing it is a package.json change, not
a docs one.
