test: raise line coverage to ~93% (tests only) (#20)

Add unit tests across Trusted's WordPress-coupled layers to bring line coverage
from ~19.5% to ~93% without touching production code:

- RestController: every trusted/v1 admin endpoint (week/slot/assignment/member/
  template) end to end against the in-memory repositories, the real
  RotaFactory/ShiftSignup and a real TemplateApplicator
- SignupController: the member-facing sign-up endpoints and no-cache header
  filter (beyond the permission gate the existing suite pins)
- TemplateApplicator: options/shiftsForTemplate/apply (create, skip-existing,
  replace, pre-assign) and createFromWeek serialisation
- TemplateFields / TemplatePostType: the ACF field group and CPT registration
- RotaRepository / AssignmentRepository / Database: the $wpdb-backed reads,
  writes, deletes and the unique-index migration, via a Mockery wpdb
- TrustedServiceProvider: every service resolves through a fake Unity container
- Rota serialisation accessors

Coverage config excludes src/Admin (calendar/developer/help pages, asset
enqueuing — WordPress admin glue) and src/Contracts (pure interfaces), matching
the exclusions the other suite plugins apply. A tests/wp-stubs.php harness
supplies the WP_REST_* / WP_Error classes WP_Mock does not, plus the plugin
constants and a few pure passthrough helpers; the bootstrap also loads Unity's
Container contract from the sibling checkout.
