docs(quickstart): publish the UDP port so HTTP/3 actually works (#1341)

docker run only published TCP 80/443. Caddy's dev config still starts
fine without the UDP mapping, but HTTP/3 (QUIC) needs it, so clients
were silently falling back to HTTP/2 with no indication anything was
missing.
