address review: clarify port conflict — only liveness-probe sidecar binds the port

Per Copilot review feedback: only the liveness-probe sidecar binds the
fixed health port; the nfs container's livenessProbe HTTP-GETs it via
kubelet, not binds it. Reword to make the mechanism explicit
(hostNetwork puts all containers on host netns → sidecar binds port →
second replica on same node loses the race → nfs container's probe
fails).
