docs(charts): document HA controller requirements and hostNetwork port conflict

controller.replicas > 1 requires >= replicas schedulable nodes because
the controller uses hostNetwork: true and its liveness-probe binds a
fixed host port (controller.livenessProbe.healthPort). Scheduling two
replicas onto the same node causes a port conflict and CrashLoopBackOff.

Document:
- The nodes-vs-replicas requirement
- A podAntiAffinity example on kubernetes.io/hostname to enforce it
- That leader-election 'Failed to update lease optimistically' logs are
  normal noise, not a bug
