Rename data_collection_category_annotation_count to assessed

Rename the data_collection_category_annotation_count field to data_collection_category_assessed across GraphQL schema and Elasticsearch index YAML. Updated src/main/resources/graphql/popsci-private-es.graphql to expose the new field name, and modified src/main/resources/yaml/es_indices_popsci.yml to use the new field in WHERE clauses, cypher projections and collections. Also changed the ES mapping type from integer to keyword and adjusted logic that previously used toInteger(...) and numeric checks to handle the new assessed value and string edge-cases. Note: this mapping/type change may require reindexing consumers of the index.
